Easter Biscuits

Ingredients
- 340g Butter
- 230g Caster Sugar
- 500g Plain Flour
- 115g Currants
- 60g Mixed Peel
- 1 egg
Method
Cream sugar and butter, gradually add flour and bring to fine crumble.
Add the fruit and mix well, then add the egg and bring together.
Rest for 1 hour in fridge
Cook for 15-20 minutes at 160oc
