Easter Biscuits

  • 340g Butter
  • 230g Caster Sugar
  • 500g Plain Flour
  • 115g Currants
  • 60g Mixed Peel
  • 1 egg


Cream sugar and butter, gradually add flour and bring to fine crumble.

Add the fruit and mix well, then add the egg and bring together.

Rest for 1 hour in fridge

Cook for 15-20 minutes at 160oc
